Sofia Clara - peanut butter cookies3I’m currently in Amsterdam airport, on my way back from a business trip, having a cup of tea and a subpar airport cookie.

It felt like the right time to share this recipe – the simplest and most delicious peanut butter cookies and a sure way to avoid having to eat subpar cookies when you’ve got a cookie craving.

This recipe will make plenty of cookies to share with your friends, family and colleagues to brighten up the end of the week.

I tracked down a few recipes online and adapted them to what I had in my cupboard and I love how they turned out. The recipe makes a few batches of cookies which is great as you can keep the dough in your fridge for a couple of days (I would suggest up to two days) and keep on making a fresh batch when that cookie craving comes back. If you’ve got too much, wrap up the dough and pop it in the freezer for a rainy day or the next cookie craving.

Also, if you’re a cake batter/raw cookie dough fan this is THE dough to make. I’m not going to lie, I ate so much cookie dough it kind put me off the first batch I made…for a couple of minutes at least.

230g room temperature unsalted butter
150g brown granulated sugar
200g caster sugar
2 eggs
1 teaspoon vanilla paste or 2 teaspoons vanilla extract
250g crunchy peanut butter
400g plain white flour
3/4 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt


Cream butter and both types of sugar together with an electric whisk or paddle attachment on a mixer. Add the eggs and whisk for a minute or two until well-combined and slightly fluffy. Mix in the vanilla and peanut butter. Next, add all the dry ingredients and mix until well-combined. The dough will be pretty sticky. Cover and leave to set in the fridge overnight, or at least for a couple of hours if you’re impatient.

When you’re ready to bake, preheat the oven to 180°C.

Roll the dough into small ping-pong sized balls and place on a lined baking tray.

Sofia Clara - peanut butter cookies11Bake at 180°C for 1o minutes until they are light golden brown. A 10 minute bake will make them crispy on the outside and gorgeously soft on the inside. If you want crunchy cookies, leave them for a few minutes longer.
