ORANGE & CRANBERRY SALAD

Have you kicked off the year with a set of healthy-eating resolutions?

I eat a fairly balanced diet and don’t overindulge too much but there’s always room for improvement and I would like to add more greens to my diet this year.

I never tire of Christmas flavours and to make the holidays last that little bit longer, I put this salad together and made a delicious orange and poppyseed dressing that took it to the next level. Salads are all about the dressing really, aren’t they?

Christmas saladWinter salad with an orange and poppyseed dressing, serves 2:

  • 1 packet of doucette salad (more commonly called lamb’s lettuce or corn salad)
  • 2 oranges, segmented
  • 100g feta, crumbled
  • 2 tablespoons dried cranberries, chopped
  • 8-10 walnuts, roughly chopped

For the dressing:

  • 50ml olive oil
  • 2 tablespoons apple vinegar
  • Zest of 1 orange
  • 1/2 teaspoon poppyseeds
  • 1 teaspoon mustard
  • 1 teaspoon balsamic cream
  • Salt & pepper to taste

It’s a salad so I’m not going to bore you with a method write up – pop it all in a bowl and all the dressing ingredients in a jar for a good shake before pouring it over generously.

Orange and poppyseed dressingThis would make a great lunch box salad for those of you who are back at work this week – just make sure to keep the sauce separate before eating it.
