Over here, mangoes are pretty pricey so when you splash out, it better be good. Mangoes for breakfast are a real treat but there’s nothing worse than cutting into a mango to find that it’s all stringy and pretty much inedible. Maybe I’m a bad mango picker, and I’m certainly living in the wrong country to get the best mangoes, but I often get a bad mango over here. I normally try to chew off anything edible and end up throwing most of it away.
The other day, I tried blending it up two particularly stringy overripe mangoes into a lassi. I had to sieve through the mix but it turned into two glassfuls of deliciousness!
Method: Blend all ingredients together with a hand blender or normal blender. If you have particularly stringy mangoes, pass the mix through a sieve with the help of a spatula. Serve in a chilled glass or leave to cool for a little bit in the fridge as it really is best served cold.
