This is the kind of meal that goes down any time of the day – breakfast, brunch, lunch, dunch (I didn’t even know that was a word, did you?), dinner – you name it!
Ever since I made this recipe, I can’t get over the avo & chickpea combination and believe me when I tell you, THIS is the ultimate combination.

All you need for this recipe is:
- 50g feta cheese, crumbled
- 100g tinned chickpeas, rinsed
- A few slices of red onion, thinly sliced
- 1 avocado
- 2 tortilla wraps
- A bunch of fresh coriander
- 1/2 lemon, juiced
- 1 tablespoon olive oil
Mash half an avocado together with the chickpeas, a tablespoon of olive oil and the juice of half a lemon. Season well with salt and pepper.
Then you can start assembling your quesadilla. Cover half a wrap with the avo & chickpea mash, add chopped coriander, crumbled feta cheese, slices of the other half of the avocado and finally, some thinly sliced red onion.
Fold the tortilla wrap over and warm on a high heat in a lightly oiled frying pan until the tortilla crisps.
