GIN, CUCUMBER & PINEAPPLE COCKTAIL
Today is World Cucumber Day and in order to celebrate this momentous day, I’ve got the most delicious Hendrick’s gin, cucumber and pineapple cocktail recipe for you to make and share with your friends.
A friend of mine, Vincent (who is a fantastic barman), helped me come up with this delicious recipe and I’m going to be making it over and over again this summer! Merci, Vincent!
Gin, cucumber and pineapple cocktail, makes one large cocktail
- 5cl Hendrick’s Gin
- 6cl fresh pineapple juice
- 4cl fresh cucumber juice
- 2cl freshly squeezed lime juice
- 1 small bottle of tonic (should be enough for 2)
- plenty of ice
Fill your glass with ice to cool the glass. In the top of your shaker, add all of the ingredients. Fill the bigger side of your shaker with ice, pour the mix over and shake well. Tip any water out of the glass that may have melted, hold back the ice in your shaker with a spoon or a cocktail strainer and pour the cocktail over ice almost to the top of the glass. Top up with tonic. Use cucumber slices, thin pineapple slices or pineapple leaves to decorate.
Enjoy while sitting in the sun with friends or however you’d like, really…anything is allowed as long as you’re paying homage to the wonderful cucumber!
