I’ve made these wraps for a few people recently and they all asked me if the recipe was on my blog. I never thought of posting it because it seemed too simple but it’s one of my go-to dinners and I know we’re all looking for easy, healthy and delicious dinners so this is nothing too fancy but a definite crowd-pleaser!

I think I learnt how to make this in an after-school cooking class when I was about 14 – we were learning easy homemade dinner ideas and this was one of them. It’s funny how it actually became one of my go-to dinners.

I often make this when friends come over because all you have to do is pop a tray of chopped vegetables in the oven, chop up some toppings and warm the wraps but it’s one of those dinners that’s full of flavour and always goes down really well.

green wrapsVeggie wraps, serves 2 people

  • 1 large aubergine
  • 1 large courgette
  • 15 mushrooms
  • 1 red pepper
  • 1 onion (I forgot to include it but normally do)
  • 4-6 tortilla wraps
  • Hummus
  • 1 avocado
  • 1 tomato
  • coriander, chopped
  • grated Gruyère cheese (optional but delicious)

Preheat oven to 200°C and line a baking tray with silver foil.

Chop the aubergine, courgette, pepper and mushrooms into bitesize slices or chunks.

easy veggie dinnerLay out on the baking tray and season with salt, pepper and a good drizzle of olive oil. Use your hands to cover the vegetables with the seasoning and olive oil and place in the oven for 25 minutes.

easy vegetarian dinner ideasPrepare the sliced avocado, hummus, chopped tomato, chopped coriander and grated cheese in bowls and warm the tortilla wraps.

Put everything on the table and let people help themselves and mix up whatever they want!

vegetable wrapsI normally start with a good layer of hummus, followed by warm veg, a little grated cheese, toppings and then a good sprinkle of chopped coriander.
