CROISSANTS AU JAMBON
This is actually an old friend’s recipe. Years and years ago she brought these ham croissant to a pool party and shared her recipe and I never forgot it (thanks Manu!). These always go down really well at picnics and parties or when you’re home alone and fancy a treat and end up scoffing down four or five.
Ingredients: 200g diced ham, a generous handful of fresh parsley chopped (2 tablespoons), 5 gherkins/cornichons chopped, 90g sour cream, a generous pinch of mustard powder or 1/2 teaspoon of mustard, salt & pepper for seasoning, 270g packet of rolled out puff pastry (33cm diameter is ideal), a dash of milk for brushing.
Method: Preheat oven to 200°C. Mix all ingredients together in a bowl. Cut pastry into pizza slices as shown above. Place a tablespoon of ham mix near the widest part of the “pizza slice”. Roll the croissant towards the point and turn the edges into the typical crescent shape (you should really check out the video for a full tutorial ;)). Pinch the edges tight to make sure no sour cream seeps out while in the oven. Place onto greaseproof paper, lightly brush with milk and pop into the oven for 25 minutes until golden brown. Serve warm.
