First of all, let’s set things straight – sweet potatoes just don’t crisp in the oven like regular potatoes do so don’t set unrealistic expectations when you make sweet potato chips.

That said, there are a few secrets to making crispy sweet potato fries and it’s taken me a little while to figure out how to make the ULTIMATE version but here it is just for you, 8 delicious but not all perfect attempts later.

  • 3 sweet potatoes
  • 1 dessert spoon cornflour
  • 2 tablespoons olive oil
  • Salt, pepper and mixed herbs to season

For the homemade coriander mayonnaise:

  • 1 egg yolk
  • 1 teaspoon mustard
  • A drop of vinegar
  • Salt & pepper
  • 125 ml sunflower oil
  • A pinch of cayenne pepper
  • A small bunch of chopped coriander


Wash your potatoes and chop them into strips with the skin on. Place in a dish and sprinkle with the cornflour, shake the dish until they are all lightly covered. You don’t want to overdo it with the cornflour – a very light covering will do.

Once covered, add olive oil, salt, pepper and mixed herbs to the dish and get your hands in to cover every chips.

This step is important – don’t crowd your chips otherwise they won’t crisp so give them plenty of room, even if that means more washing up.

How to make sweet potato friesPop the chips in the oven at 200°C for 10 minutes. After 10 minutes, turn the oven to grill and leave for another 5 minutes.

While they are in the oven, make the mayonnaise: start with an egg yolk in a bowl. Add a dash of vinegar (not too much, otherwise it won’t thicken), the mustard, salt and pepper and whisk. Then, pour in your oil in a very thin stream, whisking continuously. As the mixture thickens you can add it more quickly. Once you’ve reached a consistency you’re happy with (you may not need all the oil), whisk for another 30 seconds until glossy. Add chopped coriander and a pinch of cayenne pepper, mix and serve.

When making these, don’t forget the three secrets to get ultimate crisp: a thin covering of cornflour, not overcrowding the trays and 2 different cooking settings.
