CHEESE & THYME SCONES

I thought I would share the videos on my blog, as well as on Youtube, with a few more photos and the recipe written out in full.
We’re starting off with a savoury recipe, perfect for these warm days where you just want a little bite to eat.

All you need for about 8 scones is:
- 225g flour
- 2 teaspoons baking powder
- Salt & pepper to season
- 55g butter
- 120g grated gruyère cheese (or cheddar or any other strongly flavoured hard cheese)
- a few sprigs of fresh thyme
- 1 teaspoon mustard
- 120 ml milk
Preheat oven to 200°C. Sieve flour & baking powder in a large mixing bowl. Chop up butter into cubes. Add a pinch of salt. Rub butter into flour until the mixture resembles fine breadcrumbs. Add the grated cheese & fresh thyme pulled off the stalk. Add 1 teaspoon of mustard. Make a well in the middle of the mixture, pour in milk and mix together with a round-bladed knife until combined. Turn onto a lightly floured surface and knead gently (4-5 times) simply to make the dough uniform. Gather into a ball and flatten onto the surface with your hand until about 2cm thick. Use a cutter to cut into rounds. Place on greaseproof paper on a baking tray and lightly brush with milk. Bake for 15 minutes until golden.
This plain scone recipe (without the sugar for savoury recipes) can be adapted to make pretty much any scone you like!
