AVOCADO PESTO COURGETTI

I was adamant to have a healthy April but then this cakethese babies, lots of birthday chocolate and sweets, and a few too many meals out sent that idea right out the window. Just a couple of days ago things got worse when I realised that it was almost the end of the month so I was frantically eating all of the chocolate in the fridge. You know, much needed prepping for “healthy May” to ensure there aren’t any temptations around.

I can officially say that I have had a chocolate overdose and for once, there’s no waiting until next month or next week to start the health-kick. My body is pining for some greens.

And when you’re body pines for greens, you get your spiralizer out!

courgette spaghettiCourgette spaghetti, courgetti, zoodles, zucchini noodles, or whatever you want to call them, are awesome and if you cook them right, they really do keep a spaghetti-like texture and bite.

Sometimes I cook some pasta and have half pasta, half courgetti for a meal that’s a little more filling but either way this recipe is absolutely delicious!

zoodlesAvocado pesto courgetti, serves 1 big portion

For the courgetti:

  • 1 courgette
  • 1 tablespoon olive oil
  • 2 tablespoons cooked chickpeas
  • 1 tablespoon toasted pinenuts

For the avocado pesto:

  • 1 ripe avocado
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons pine nuts
  • 1 clove garlic, crushed
  • a handful of basil (about 10 large leaves)
  • salt & pepper to season

healthy zoodlesUse a spiralizer to make the courgette into spaghetti-like strips. Place on a piece of kitchen roll to absorb some of the moisture.

If you have very long strips, you may need to break them into shorter strips.

how to make zucchini noodlesTo make the avocado pesto, blend together all the ingredients using a food mixer. Tall smoothie blenders don’t work very well as there isn’t quite enough liquid. Using a hand mixer would work better.

Season well with salt and pepper.

avocado pestoIn a small frying pan, heat the olive oil. Fry the courgetti on a medium-high heat with the chickpeas for 2-3 minutes. You want there to still be a bit of a bite to the courgette, just like aldente pasta.

Remove from heat, add the avocado pesto to the pan and mix well.
