I’m a huge fan of mashed avocado on toast but I felt like it was time to change things up a bit. After pinning a ton of avocado hummus recipes, I was sold on the idea of combining avocado and chickpeas and believe me if you try this, you will be, too.

This is such an easy lunch idea if you have a small office kitchen to prepare lunch you can take the ingredients with you or if you pack a lunch, skip out on the poached egg and just make the mashed avocado and chickpea mix before hand and take a bread roll.

All you need for this recipe is:

Lunch snack idea

  • half an avocado
  • 3 tablespoons of chickpeas
  • 2-3 radishes
  • half a lime
  • 1 tablespoon greek yogurt
  • chopped coriander
  • 2 slices of wholegrain toast
  • chopped coriander

Mash the avocado and chickpeas together on a plate with a fork. Add the greek yogurt, a squeeze of lime and the chopped coriander. Season well with salt and pepper. Toast a couple of slices of toast and put the mash on the toast. Serve with slices of radishes and a poached egg.
