Here comes Youtube video numero dos!
I’m really excited about getting recipes up on Youtube. They are so much fun to film and the response to my first one was awesome. Thanks, guys!
This week’s recipe is an easy apricot tart with apricots from the Valais (here in Switzerland) which is just perfect for summer. It really doesn’t get any easier than this. If you’re having friends over for dinner and want to make a dessert but are running short on time, this is your go-to recipe. It won’t let you down!

- 1 32cm diameter shortcrust pastry base (I was short on time so got a roll of pastry from the Coop but if you can make it yourself, even better!)
- 800g apricots
- 1 egg
- 50g sugar
- 100ml single cream (double pouring cream works too)
Preheat over to 180°C. Line the bottom of a 32cm tart tin with greaseproof paper. Line with pastry and prick the base with a fork a few times. Bake pastry case for 8 minutes in the oven.
Whilst the pastry is baking, wash your apricots and cut into quarters.
Whisk together sugar and egg until creamy and light yellow in colour. Whisk in the cream.
Remove the pastry from the oven and leave to cool slightly. Arrange apricot quarters in the case and pour over the egg mix. Bake for 25 minutes at 200°C.
Serve with a sprinkle of icing sugar and a dollop of whipped cream.
